Quick and Super Tasty Quinoa Tabbouleh

  • 1 cup quinoa

  • 1/2 cup coarsely chopped seeded tomato

  • 1/2 cup chopped fresh mint
  • 1 cup chopped parsley

  • 1/4 cup finely chopped cucumber

  • 2 tablespoons fresh lemon juice

  • 1/4 cup finely chopped red onion

  • 1 tablespoon extra-virgin olive oil

  • 1/2 teaspoon salt

Grind the mint and parsley in a chopper for 30 seconds. Mix all ingredients in a a large bowl and serve – so delicious!
