Weekend Delight: Dutch Pancake with Fresh Wild Berries

I wanted to try something completely different this weekend while also keeping it super healthy for my family and myself:

This was my first time making this recipe and it turned out oh so yummy!!

  • 1 cup all-purpose flour
  • 3 eggs
  • 3 Tablespoons sugar
  • 1 cup milk
  • dash of salt
  • 1 tablespoon vanilla extract
  • 1 tablespoon lemon zest
  • pinch of nutmeg
  • 1 teaspoon cinnamon
  • butter to grease the pan
  • powdered sugar
  • berries or any kind of fruit
  • maple syrup or pancake syrup

Directions
1) Place a cast iron skillet in the oven and preheat to 425° F for 15 minutes.
2) In a bowl mix flour, eggs, milk, salt, nutmeg, cinnamon ,sugar, vanilla extract, and lemon zest until mixed and smooth.
3) Carefully remove the hot pan from oven and swirl the butter around the pan to coat completely, and then pour the batter into the hot pan. Place the pan back in the oven and bake for about 15 minutes , until the edges are golden and puffed in the middle.
4) Carefully using a spatula remove the pancake from the pan and place on a cooling rack. Slide the pancake onto a large serving plate. Sprinkle with powdered sugar, top with berries and drizzle some maple syrup.
